Veg Cutlet is a Tasty Nutritious Snack,can be had as an appetizer or Evening Snack. This Snack is Crisp Outside & Soft Inside,made with Mashed Veggies.It is a Kid Friendly Snack. It is Served in Parties & Marriages also. It can be served with Green Chutney or Ketchup. I learnt this Recipe from my Aunt. She is Expert in Making Cutlets. Normally she deep fries it, for healthier Version i Shallow Fried it.

Ingredients
Carrot - 1.
Potato -2.
Green Peas - 1/2 Cup.
Beetroot - 1/2
Ginger - 1 inch.
Green Chillies - 3.
Salt - to taste.
Bread Crumbs - 1/2 Cup
Garam Masala - 1/2 tsp.
Garam Masala - 1/2 tsp.
Coriander leaves - Handful.
oil or butter - to fry.
Preparation
Peel the skin of Carrot,Potato & Beetroot. Chop the veggies into small Cubes.

Method
- Grind Green Chillies,Salt & Ginger into a Paste.
- When Pressure Subsides, open the lid,drain the water Completely.(Make Sure that there is no water in Cooked Veggies). Then mash it with potato Masher,add Green chilly Paste, Bread Crumbs,Garam Masala & finely Chopped Coriander leaves.
- Mix well everything, take the lemon sized Mixture, make Medium sized thick Patties by rolling & flatenning the mixture at your Palms.
- Heat 2 to 3 tbsp of oil or butter in a Pan for Shallow frying. Place the cutlets in a Pan for frying.
- Flip the Cutlets Couple of times, till it turns Golden & Crisp on both the Sides.
- Drain the Cutlets on Kitchen towel to remove Excess oil.
- Serve the Veg Cutlets hot with Green Chutney or tomato Ketchup.
Notes
- You can use Veggies of your choice like Beans,Brocolli or Cauliflower.
- Adding Green Chillies gives nice taste to Cutlet.
- Bread Crumbs gives nice Binding to Cutlet, instead you can use Powdered Poha or White Sooji.
- You can also deep fry the Cutlets.
- I used butter to fry the Cutlets.
