Udipi Sambar Recipe is an Authentic sambar Recipe from a place called Udipi in Karnataka. It Goes well with idli,dosa & Steamed Rice. Udipi Masala is Made from fresh Ground Spice Paste. Veggies are simmered in Udipi Masala ,Cooked dal & Tamarind juice. This sambar has spicy, tangy, sweet taste. Now we will see the Recipe.

Ingredients
Drumstick - 2.
Brinjal -4.
Pumpkin - 1/4 cup.
Pearl onions - 12.
Tomato - 2.
Tamarind - Goosebery size.
Jaggery - 1 tsp.
salt - to taste.
Toor dal - 1/2 cup.
Turmeric Powder - 1/4 tsp.
Coriander leaves - 2 tbsp(chopped)
To Roast & Grind
Chanadal - 1 tbsp.
Urad dal - 1 tbsp.
Coriander seeds - 2 tbsp.
Cumin seeds - 1/2 tsp.
Red Chillies - 4.
Coconut - 1/4 cup.
To Temper
Mustard seeds - 1/2 tsp.
Curry leaves - 1 sprig.
Red Chilli - 1.
Hing - 1/4 tsp.
Coconut oil - to fry.
Preparation
Chop the drumstick,brinjal,Pumpkin,Onion,Tomato.(put the brinjal in water to avoid discoloration)
Pressure cook the dal with turmeric Powder in a needed water, for 4 - 5 whistles, then mash it
.
Method
- Dry Roast the items listed in DryRoast & Grind Column, except coconut. Finally add coconut, give a quick mix, switch off the flame. Coconut cooks in heat of kadai.
- Then Grind it into a smooth paste with needed water.Now udipi Masala is Ready.
- Heat the oil, add Pearl onions,tomato,drumstick. Saute for 4 -5 minutes.
- Then add brinjal & Pumpkin saute for 3 - 4 minutes.Add needed water & Cook till veggies turns soft.
- Add Cooked dal, Udipi Sambar Masala, salt,tamarind juice & jaggery. (Adjust water).
- Cook for few minutes, till it gets Sambar Consistency.
- Heat the coconut oil, add mustard seeds.When it splutters add curryleaves,Red chilli & hing.
- Pour the tempering over Sambar. Garnish with fresh Coriander leaves.
Notes
- Adjust Red chillies according to your spice levels.
- you can use veggies of your choice like Carrot,Potato,beans & chow chow.
- you can also use cumin seeds for tempering.
- you can also use 1/4 tsp of Methi seeds while Roasting & Grinding.

You added coconut in masala grinding while there is no mention on recipe. Confusing. Need to clarify, else all efforts put will be waste if the taste differs.
