Methi Bhaji is a Healthy Side dish from state of Maharastra. It Goes well with Chapathi,Roti,Phulka's & hot steamed Rice.Methi Bhaji is made with fresh Methi leaves,sauted with Onions & tomato. Tomato Gives Tanginess to Bhaji.Methi is loaded with full of nutrition. Fenugreek leaves have high content of iron which increases RBC & hemoglobin.Consuming this leaves by lactating mothers, increases milk Production.Now we will see the preparation of Methi Bhaji.

Ingredients
Methi leaves (chopped) - 1 Cup.
Onion - 1.
Tomato - 1.
Coriander Powder - 1/2 tsp.
Cumin Powder - 1/4 tsp.
Chilli Powder - 1/2 tsp.
Turmeric Powder - 1/8 tsp.
Salt - to Taste.
To Temper
Mustard seeds - 1/2 tsp.
Cumin seeds - 1/2 tsp.
Garlic - 4.
hing - Generous Pinch.
oil - to fry.
Preparation
Clean the Methi leaves, wash it & chop finely.
Chop Onion,Garlic & tomato finely.
Method.
- Heat the oil, add mustard seeds.When it splutters add Cumin seeds.
- When it sizzles, add hing,then Garlic, saute till Garlic turns Golden.
- Add Chopped Onions, saute till it turns Pink.
- Add Chopped Methi leaves, saute now & then. Cook it covered, till leaves are Cooked.
- Add Chopped tomato. Add all spice powders., Coriander Powder,Cumin Powder,turmeric Powder & salt.
- Cook till tomatoes turns Mushy. Now Methi Bhaji is Ready to Serve.
Notes
- Onions could be replaced with pearl onions also, which gives extra taste to curry.
- you can replace chilli powder with Green chillies also.
- Adding tomato gives tangy taste to bhaji.
