Fried Onion Curry is an Easy & Quick Side dish made with Sauted Onions & tomatoes spiced with Green chillies & chilli Powder. It Goes well with Chapathi,Roti,idli,dosa & curd Rice.you can pack for travels too. if you have plan to pack for tours, add some more oil.so its shelf life will be increased.

Ingredients
Onions - 4.
Tomatoes - 2.
Green Chillies - 4.
Ginger - 1 inch.
Garlic - 2.
Chilli Powder - 1/2 tsp.
Turmeric Powder - 1/4 tsp.
Salt - to taste.
To Temper
Oil - to fry.
Mustard seeds - 1/2 tsp.
Cumin seeds - 1/2 tsp.
Chana dal - 1 tsp.
Urad dal - 1 tsp.
Curry leaves - 1 Sprig.
hing - a Generous Pinch.
Preparation
- Remove the skin of Garlic & mash it slightly.
- Cut the onions lengthwise.
- Cut the tomatoes,Ginger & chillies.
Method
- Heat the oil, add mustard seeds when it splutters, add cumin seeds.
- When it sizzles add chana dal, Urad dal, Green Chillies,Ginger Garlic & Curry leaves.
- When dal turns Golden brown, add chopped Onions.
- Saute the Onions till it turns Golden Brown.
- Then add tomatoes,Chilli Powder,turmeric Powder & Salt.
- Saute till tomatoes turns Mushy.
- Now Fried Onion Curry is Ready to serve.
Notes
- you can add 1/4 tsp of Garam Masala for Extra flavour.
- you can add 1/4 tsp of fennel seeds while adding Cumin seeds.
- To increase its shelf life, add more oil.Then you can pack for travel also.
- Instead of Green Chillies, you can add Chilli Powder alone. I have added both for different taste.
