Spicy Kandagadda Vepudu - Suran Chips - Elephant Yam tawa Roast

Yam fry is a tasty delicious sides marinated with spice Powders & roasted in a tawa till it turns crisp.yam is known by Kanda gadda in Telugu,Suran in Hindi,Senai kizhangu in Tamil,Chena in Malayalam & Suvarnagadde in kannada. Yam is Rich in Vitamin B6.yam is Particularly useful for menopausal Women which supports female Endocrine system.it is Rich in AntiOxidant.it also helps in RBC Production.Now we will see the preparation of Suran Chips.




Kandagadda Vepudu

 Prep Time : 10  min. 
Cook Time : 30   minutes.

Serves  :   4 - 5 . 

Ingredients

Elephant yam/Kandagadda - 250 gms or 1/4 kg.
Tamarind - Big Amla size.
Turmeric - 1/2 tsp.
salt - As needed.

For Marination

Chilli Powder - 1 tsp.
Coriander Powder - 1 tsp.
Cumin Powder - 1/2 tsp.
Garam Masala - 1/2 tsp.
Salt - As needed.

Preparation

Peel the skin of yam & cut into shapes as shown in the Picture.Slices should not be too thin or thick.

Prepare tamarind Extract by Soaking the tamarind in water, for half an hour.Then squeeze the tamarind & throw the Pulp.



Method

  • Take a pan or kadai, add water,with turmeric,salt & Tamarind juice.Then add yam Pieces. Par boil (Half Cook) it.Then drain the water Completely.

  • Then place the  yam pieces in a bowl or plate. Add all spice Powders such as Chilli Powder,Coriander Powder,Cumin Powder,Garam Masala & salt(adjust salt).Mix Gently & evenly.Allow it to marinate for 20 minutes.
                                       

  • Now switch on the stove.keep a flame to medium,then arrange the Marinated yam pieces in tawa.Add a tsp of oil & toast on both sides till it turns Golden. Repeat the same for remaining yam Pieces.Serve hot.                              

Notes
  • you can add a tbsp of Besan flour while marination.
  • you can add a tsp of Ginger Garlic Paste while Marination for additional flavour.
  • Always cook in a Medium flame for Even Cooking.
  • Always use iron skillet for best Results.
  • Instead of Garam Masala you can add Sambar Powder for different Taste.
  • you can Replace Cumin Powder with fennel Seeds Powder.
