Gummidikaya Puli kuzhambu is an Spicy,tangy sweet stew. It Goes well with hot Piping Rice. it can also be eaten with chapathi or Ragi, bajra or Jowar Roti.
Gummadikaya Pulusu
Prep Time : 10 min. Ingredients
Gummidikaya (yellow Pumpkin) - 200 gms.
Onion -1.
Garlic - 4 cloves.
Tamarind - Big Amla size.
Red chillies - 2.
Jaggery - 1 tsp.
chilli powder - 2 tsp.
Turmeric Powder - 1/4 tsp.
Coriander powder - 1 tsp.
salt - As needed.
To Temper
oil - As needed.
Mustard seeds - 1/2 tsp.
cumin seeds - 1 tsp.
hing - 1/8 tsp.
Methi seeds - 1/4 tsp.
curry leaves - 1 sprig.
Preparation
Chop the Gummidikaya into cubes.
Chop onion & Garlic.
Soak tamarind in 1/2 cup of water for half an hour to extract the Tamarind juice.
Method
1.Heat the oil, add mustard seeds. When it splutters add cumin seeds.When it sizzles add Methi seeds, hing , Red chillies & curry leaves.
2. When Red chillies changes its colour lightly. Add Garlic.
3. Saute Garlic till it turns Golden. Then add onions.
4. Saute onions till it turns pink. Then add cubed pumpkin.(Gummidikaya).Saute for 2 Minutes.
5. Add Chilli Powder,Coriander Powder,Turmeric Powder, & salt.Give a Quick Mix.
6. Then add tamarind juice.Add jaggery. Then add Needed water along.
7. Cook till Pumpkin turns soft & it gets Gravy Consistency. Finally Garnish with Coriander leaves.
Notes
you can Replace with any vegetable like Bendakaya, vankaya or Munakkaya.
