Mor Kuzhambu is a Popular South Indian Butter Milk based stew made with Sour butter Milk,fresh Coconut,Green Chillies & Some Spices.Vegetables of your choice like Ash Gourd,Okra,Bottle Gourd,Brinjal or Potatoes are Simmered in Spiced Butter Milk.it is Called Mor Kuzahambu in Tamil,Majjiga Pulusu in Telugu & Majjiga Huli in Kannada.It goes well with Steamed Rice.

Ingredients
Thick Sour Butter Milk - 2 + 1/2 Cups.
Ash Gourd/White Pumpkin(Chopped) - 2 Cups.
Turmeric - 1/4 tsp.
To Grind
Toor dal - 1 tbsp.
Coriander Seeds - 2 tsp.
Cumin seeds - 1 tsp.
Coconut - 1/2 Cup.
Green Chillies - 5.
Salt - to taste.
Temper
oil - to fry.
Mustard seeds - 1/2 tsp.
curry leaves - 1 sprig.
hing - a Generous Pinch.
Preparation
- Soak the toor dal for 1/2 an hour in water.
- Cube the Pumpkin.
- Blend the butter Milk till smooth using whisk or blender or mixie.
Method
- Cook the AshGourd with 1/2 cup of water,till Soft.
- Mean While, grind the items listed in "to Grind" Column to smooth paste, by adding little water.
- when Ash Gourd is Cooked, add Ground Paste ,blended Butter Milk & turmeric.
- Cook in low flame for 3 - 4 minutes.Then switch off the flame.
- Heat the oil, add oil, add mustard seeds.when mustard seeds splutters add curry leaves & hing.Give a quick mix.Pour this tadka over Mor Kuzhambu.
- Garnish with fresh Coriander Leaves. Serve with Steamed Rice or Kara dosai or Adai.
- Always Cook mor kuzhambu in low flame.
- Don't Cook More Kuzhambu for more time, else butter milk may get curdled.
- if you are using okra, fry in oil, then add in butter Milk.
- Use Sour butter Milk for tangy taste.
