Pumpkin Erissery is an authentic Kerala Recipe, made during festive Occasions like Onam & Vishu.Fresh Pumpkin & Cow peas are Cooked till soft, then simmered in Coconut Cumin Paste & tempered with Roasted Coconut. This is a healthy dish loaded with lots of nutrition. Pumpkin is rich in fiber & also low in calories, which helps in Weight loss faster.Beta Carotene present in pumpkin acts as a anti oxidant. Cow peas are loaded with anti oxidant agents vitamin A & C.Cow peas are rich in soluble fiber which is a great for diabetics.

Ingredients
Pumpkin(yellow) - 2 Cups.
Cow Peas (lobia) - 1/2 cup.
To Grind
Coconut - 1/2 cup.
Cumin seeds - 1 tsp.
Green Chillies - 3.
Turmeric - 1/4 tsp.
Salt - to taste.
To Temper
Coconut oil - (to fry)
Mustard seeds - 1/2 tsp.
Urad dal - 1 tsp.
Curry leaves - 1 sprig.
hing - a Generous Pinch.
Coconut - 1/4 cup.(Grated)
Preparation
Peel the skin of Pumpkin, Scoop the seeds out, & chop into medium sized cubes.
Soak Cow Peas for 2 hours.
Method
Pressure cook the cow Peas with little salt & needed water, in a medium flame for 2 - 3 whistles till it turns soft.
Grind Coconut +Green Chillies + Cumin seeds + turmeric + salt into a smooth Paste with needed water.
Cook the Pumpkin with needed water till it turns Soft.
Add Ground Paste,Cooked cow peas & needed water.
Mean while heat the oil, add mustard seeds.When it splutters add urad dal, curry leaves,hing.When dal turns light Golden brown colour,add Grated coconut. Saute till it turns brown. Now add this tempering over Erissery.
Now serve,Mathanga Erisseri with Rice.
Notes
- Always use Coconut oil, for nice flavour.
- Adjust Green chillies according to your taste buds.
- you can add 1/4 tsp of chilli Powder, while tempering.
- Always use fresh Coconut for Good taste of Erissery.
- Alternatively you can also slightly mash the Pumpkin.I liked chunky version, so i Used it as such.
