Cut Mango Pickle is a hot Spicy Pickle Recipe, made with Mangoes & spice Powders. This is a No Cook Recipe. It Goes well with Curd Rice, Roti's, Paratha's & upma's. I learnt this Recipe from my aunt. Everyone in home, liked the hot spiciness in the pickle.
No Cook Cut Mango Pickle

Serves : 2.5 Cups.
Ingredients
Mango (cut) - 3 Cups.
Chilli Powder - 1/2 Cup.
Salt - 1/2 cup. (preferably Rock salt)
Ginger & Garlic - 1/2 cup. (coarsely Ground)
Sesame oil - 150 ml.
Preparation
1. Chop the Mango into small cubes.
2. Peel the Skin of Ginger & Garlic, & Grind it into a little coarse Paste.
Method
1. Take a Wide vessel, add 3 Cups of Chopped Mangoes.
2. Add Chilli Powder, Salt, Coarsely Ground Ginger Garlic Paste.
3. Add oil little by little, Mix well & keep aside. Now the Mixture will be dry. Close it & leave it for a day.
4. After 24 hours, it oozes moisture, use dry spoon to Mix it. Now hot spicy pickle is Ready.
5. you can use it on same days, it tastes even more Good after 4 to 5 days with incorporated masala's .
Tips
1. Mix well the Pickle, each day for 4 - 5 days with dry spoon.
2. After 4 to 5 days, you can refrigerate & use for Couple of Months.
