Pudina Rice is a flavourful Rice Recipe made with fresh Mint leaves & Coriander leaves. Freshly Ground Chillies Ginger,Garlic,pearl onions are added with these leaves & sauted till nice aroma.Then coconut milk is also added with it for additional taste. you can add fresh Veggies like Peas,Carrot,beans,Cauliflower or corn kernels to make it more healthy.you can serve as lunch or dinner.you can pack for lunch box too.Mint leaves promotes digestion & soothes the stomach.

Ingredients
Basmathi Rice/Jeeraga Samba Rice - 1 Cups.
Onion - 1.
Potato - 1.
Peas - 1/4 cup.
Coconut Milk - 1 cup.
Water - 1 cup.
To Grind
Mint leaves - 1 cup.
Coriander leaves - 1/2 cup.
Green chillies - 3 - 4.
Ginger - 1 inch.
Garlic - 3.
Pearl onions - 6.
salt - to taste
To Temper
Bay leaf - 1.
Cinammon - 1.
Cloves -2.
Cardomom -2.
Preparation
Soak the Basmathi Rice for 1/2 an hour in a cup of water.
Method
- Heat the oil in a Cooker add bay leaf,cardomom & Cloves. saute for few seconds till you get Good Aroma .
- Add Chopped Onions,saute till it turns Pink.
- Add Mint-coriander paste .Saute & cook for 2 -3 minutes.
- Then add cubed Potato & Green Peas, saute for 2 minutes.
- Drain the rice, add it to cooker, saute for 2 minutes. Then add a cup of Soaked Rice water & Coconut Milk. Mix well.
- Close the lid. When pressure starts Coming from the Cooker vent, keep the flame to sim.Now Put the cooker weight & cook for 5 minutes.
- Now switch off the flame. Open the Cooker after 15 minutes. Serve hot with Raita or Papad.
Notes
- I used Coconut Milk for additional flavour,instead you can grind the coconut along with milk leaves.
- you can add veggies like carrot,beans,potato,Green Peas,Cauliflower or Corn kernels.
- you can also add 1/4 cup of cooked soya chunks along with veggies.
- Adding Coriander leaves along with mint leaves gives nice flavour to Rice.
