Kaju Katli is an Indian Popular Sweet made with Cashews and Sugar.We Will learn Very Simple Method to do Kaju katli, without Making Sugar Syrup. Cashews - 1 cup (Whole Cashews are Preferable)
Sugar - 1/2 cup.
Water - as required. (5 tbsp)
Ghee - 1 tbsp.
Method
- Dry Roast the Cashews, with Medium low flame for 4 - 5 Minutes, Which gives crispness to cashews.
- Then cool the cashews completely. Then grind it into a Powder in a blender or Mixie. This is the important Step while making katli's. Also don't Grind for longer time, it oozes oil.
- Take thick bottomed kadai,heat the kadai, keep flame to Medium low, add sugar with 5 tbsp of water.
- When Sugar dissolves,not necessary for any string consistency.if sugar melts that is enough.
- when water starts bubbling, add cashew powder. Mix well.
- Stir for few minutes till it becomes thick, and it leaves the sides of kadai as shown in the picture. add a tbsp of Ghee.Give a quick mix.
- Then immediately pour the dough over a plate. Then flatten it with Spachula as shown in above picture.
- Then cut into desired shape, when it is little warm. Now Simple Kaju Katli is Ready.
Notes
- Once it comes in the form of soft dough and leaves the sides of kadai, pour immediately over a plate, then flatten it . Once it cools down it becomes crisp automatically.
